Weekend

Hey all. What a fun weekend. We went to visit my daughter and son in law. It was so nice to see them again. We went to an antique mall and also laser tag. I stunk at that, but had fun none the less. We then went out to dinner at an awesome restaurant in the area. We spent the night and came home today. It was hectic, but so worth it as I miss her and it is so nice to get together.

Garage Storage

Check this out

Hey all. Here is another great recipe to check out. You are going to love it as well. Please let me know what you think of it or if you made any of your own special changes to it. It is one of Rachel Ray's recipes. I personally prefer to leave the bacon out, because our family does not like it. But you may. Check it out and enjoy.
Mac and Cheese Lorraine

Salt
1 pound gemelli pasta or other short cut pasta
1 tablespoon extra-virgin olive oil
1/2 pound bacon, chopped
2 onions, quartered and thinly sliced
1/2 cup dry white wine
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup chicken stock
1 cup whole milk
Freshly ground black pepper
2 cups shredded Gruyere
Pinch freshly grated nutmeg, to taste
1 tablespoon Dijon mustard

Heat water for pasta, salt water and cook pasta to al dente.

While pasta water comes to boil, heat extra-virgin olive oil, 1 turn of the pan, in a deep skillet over medium-high heat. When oil is hot, add bacon and crisp, 5 to 6 minutes. Remove with a slotted spoon and drain on paper towels. Add onions and cook 10 minutes until soft and beginning to caramelize. Add wine and cook out, 1 minute.

While onions cook, heat a sauce pot over medium heat. Add butter, melt and whisk in flour. Cook 1 minute then whisk in stock and milk and bring to a bubble. Thicken a few minutes then season with salt and pepper. Melt in cheese stirring it in a figure-8 motion with a wooden spoon. Add nutmeg and mustard and adjust salt and pepper.

Drain pasta, toss with onions and stir in cheese sauce to coat. Top with crispy bacon and serve.

Recipe

Hey all. I have not posted any new recipes lately. Sorry about that. Well here is a great one that my family loves. It is easy to prepare and tastes great too. For those of you that love Chicken tenders, it is a spin on them. We eat them all the time in our house so I am always looking for a new way to prepare them. Give it a try and let me know whatyou think.

Chicken tenders

2 tablespoons coarse sea salt
1/2 cup sesame seeds
4 tablespoons dried minced onion
4 tablespoons dried herbes de Provence
2 packages, 1 1/2 to 2 pounds, chicken tenders
1 large shallot, minced
1/2 cup sherry vinegar

Preheat oven to 400 degrees F.

Mix the salt, seeds, onion and herbs on shallow plate then coat the chicken tenders in mixture and bake on nonstick baking sheet 18 to 20 minutes until golden and firm. Turn halfway through the cooking.

Combine the shallots with the sherry vinegar.

Dab, spoon or dip the vinegar over the sticks as you dine.

Then maybe a trip to WalMart to get her all the essentials she needs. We can not wait to see her. Even her brother. HAHA

MD visit

Hey all and good morning. Tomorrow will be a bit of a hectic day for me. I have to take my son for bloodwork in the morning. As I have said, he has a seizure disorder and has to have blood work done every four months. It is time again. He hates going as much as I hate taking him. Since he has special needs it is impossible to explain to him that it is necessary. All he knows is that it hurts and he becomes very upset. Once it is over we are good for another four months though. His doctor visit is on friday then, which he does not mind. The bloodwork is the tough one though. Wish me luck on this adventure.

Hey all. I was on the internet this morning and look what was able to capture. I think that I have been trying for weeks now, but here it is. Yeah. It is 1K Tuesday.
PayPerPost University is a PayPerPost site that is relatively newly available to the PayPerPost advertisers and bloggers alike. What this site does is it allows bloggers both new to PayPperPost and veterans like myself the ability to have a resource available to understand and learn about the PayPerPost Marketplace. The site offers videos and tutorials to watch. As I was checking one such video out, I found them to be both informative and at the same time amusing as they do incorporate humor within them as well. Well done on these you folks at PayPer Post. I find myself looking them over from time to time as I feel it is important for us veteran posties as well to keep up to date ont ehwhole PayPerPost concept. If there are any changes being made as well, this site is sure to let you become aware and in an amusing way as well. Keep in mind as well that these tutorials are made available for both the bloggers and advertisers as well. They too need to be kept aware and up to dat on what PayPerPost offers advertisers as well. I found the create text opportunity one of the best videos offered. It takes you through the whole process of writing up an opportunity and gives you a great understanding of the whole process. Again, a well done video. I look forward to seeing more videos on writing the opps up as I feel we could all use a writing lesson now and then and it is imperitive that we continue to write quality posts for the advertisers so they will continue to keep us on as their bloggers with ads for these advertisers. Again, a well done site PPP and I look forward to checking out the site frequently for updates on the various videos. They are all extremely helpful to all us posties. Shopping

Good morning all. I am leaving in a little bit to take my mom grocery shopping. This is the high light of her week. We usually go to the bank, the groceries, then drug store, then out for a coffee. You can see that it is some what of an all day event. She enjoys it though and we get to spend time together. She usually has a huge order of food to get. Honestly, I do not know what she does with all the food that she gets each week. One person and boy does she buy a lot.

Out to Dinner

Hey all. We are going out to dinner this evening. It is my son's birthday and he chose this small I talian restaurant. I do not even have to ask him, I know that he will choose the chicken milanese. His also love thier tomato bisque soup. They are great though. I love to cook, but it is great to go out and have a great meal like at this place. Here is the beat part, my local paper had a twenty dollar coupon in it for this restaurant as they a re celebrating their twenty year anniversary in business. What a treat to have a great dinner and save twenty dollars as well. more later.

Funnel Cakes

Hey all. Who does not love funnel cakes? One of the great carnival foods out there. Well here is an easy recipe for them. One secret ingredient, guess? It is vanilla coffee creamer. Makes them taste great. Also fill a plastic ketchup container with the batter. It will work great, just be sure it is really cleaned out. Enjoy these.
3 cups all-purpose baking mix
2 eggs, lightly beaten
1/2 cup milk
1 cup liquid vanilla coffee creamer, or other flavor of your choice
Vegetable oil, for frying
Confectioners' sugar, for dusting

In a large mixing bowl, combine baking mix, eggs, milk and coffee creamer. Whisk until smooth. Set aside.

In a deep-fryer, heat oil to 375 degrees F.

Cover the bottom of a funnel with your finger. Ladle 1/2 cup of batter into funnel. Holding funnel over oil, slowly release finger and move in a spiral motion, then cross over to create criss-cross pattern. Fry golden on both sides, about 2 to 3 minutes per side. Drain on paper towels and dust with confectioners' sugar.

Alternate method: Instead of using a funnel, try squeezing batter out of a plastic ketchup bottle. This can help you make the design more accurate and is also less messy.

Hey all. I was just watching the Discovery Health channel. I think that is one of the best tv channels out there. The stories are so interesting. Some are so heart warming as well. Doughnuts

Hey all. In the mood for something for that sweet tooth? Check out this take on doughnuts. My kids love it. When I am looking for that special treat or an occasional after school sweet, this one tops it. It is quick and easy to prepare. The kids will flip for it. Remember though, not to much as we do not want to ruin our dinner appetitie.
Glazed Doughnut Crisps

1 (18-ounce) package refrigerated sugar cookie dough, room temperature (recommended: Pillsbury)
1/2 cup all-purpose flour
1/2 teaspoon brandy extract
Prepared vanilla frosting
Drippy icing, recipe follows

Preheat oven to 350 degrees F.

Knead dough with flour, adding in 2 parts, and brandy extract. Break into 2-inch pieces. Roll each piece into a 6-inch long rope. On an ungreased cookie sheet, shape rope like a doughnut, pinching ends together. Freeze for 10 minutes. Bake for 10 to 12 minutes. Cookies should be just lightly golden on top.

Cool completely. Frost each cookie with vanilla frosting. Drizzle Drippy Icing over cookies.

Drippy Icing:
1 cup sifted powdered sugar
2 tablespoons milk
1 drop yellow food coloring

In a small bowl, whisk together powdered sugar and milk. Tint with 1 drop yellow food coloring. Add more powdered sugar for stiffer consistency, if desired. Drizzle over cookies

Sunday Morning

Morning all. My daughter is in from college this weekend. It is great having her here. She doing homework now though. We had a nice day shopping yesterday. More clothes of course. I just finished reading the paper. One of my favorite things to do on Sunday mornings. I try to get up before anyone else and watch the news and have a coffee. Does it get any better. Cheese Souffle

Hey all. Here is a recipe for a cheese souffle that I make often. It is so easy to prepare and tastes just like the more difficult variety. Please try it out and let me know what you think. You will not believe how fast it goes together. Serve it with a fruit salad and hard rolls. The house will smell great when you bake it as well. Have fun with it.

6 tablespoons (3/4 stick) unsalted butter, plus more to butter a 6-cup gratin dish
6 tablespoons all-purpose flour
2 cups cold whole milk
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
5 extra-large eggs
2 1/3 cups grated Swiss cheese, preferably Gruyere (about 6 ounces)
3 tablespoons minced fresh chive blades

Preheat the oven to 400 degrees F.

Butter a 6-cup gratin dish, and set it aside. Melt the butter in a saucepan, then add the flour, and mix it in well with a whisk. Cook for 10 seconds, and add the milk in 1 stroke, and mix it in with a whisk. Keep stirring with the whisk until the mixture thickens and comes to a strong boil, which will take about 2 minutes. It should be thick and smooth. Remove from the heat, and stir in the salt and pepper. Allow about 10 minutes for the white sauce to cool.

Meanwhile, break the eggs into a bowl, and beat well with a fork. Add the eggs, the cheese and the chives to the cooled sauce, and mix well to combine. Pour into the buttered gratin dish and cook immediately, or set aside until ready to cook.

Bake for 30 to 40 minutes, or until the souffle is puffy and well browned on top. Although it will stay inflated for quite awhile, it is best served immediately

Breakfast

Hey all. I have been looking for breakfast recipes and here is one that I think sounds awesome. Check this out.
Great Ricotta Pancakes


For the topping:
12 slices prosciutto
Salt and freshly ground black pepper, optional
4 Golden Delicious apples
1/2 stick butter, melted
1/4 cup maple syrup

For the pancakes:
2 cups ricotta
4 large eggs, separated
1 cup buttermilk
1 tablespoon lemon juice
1 teaspoon lemon zest
1 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
Pinch salt
Butter, for cooking
Confectioners' sugar, for dusting, optional
1 cup maple syrup, warmed on stove-top

For the topping:
Preheat oven to 400 degrees F.

On 1 tray lay the slices of prosciutto out in a single flat layer. Season with some salt and freshly ground black pepper, if desired, and pop into the oven. Roast the prosciutto until crispy, about 10 to 15 minutes.

Cut each apple into thirds, remove the cheeks and discard the core. Slice each piece into 4 and toss with butter and maple syrup in a large bowl. Transfer to a roasting pan and place in the oven. Roast the apples until they are fork-tender and slightly caramelized on the top, about 30 to 45 minutes depending on ripeness of the fruit.

For the pancakes:
Combine the ricotta, egg yolks, buttermilk, lemon juice, and lemon zest in a large mixing bowl. Sift the dry ingredients: flour, sugar, baking powder, and salt together into the ricotta mixture and stir until fully combined. In a separate bowl whisk the egg whites until stiff peaks form and then gently fold into the batter.
Heat a large nonstick pan over medium heat and add a little butter. Cook 2 to 3 pancakes at a time using a 6-ounce ladle or measuring cup to pour the batter into the pan. The trick to perfect round pancakes to carefully pour all the batter in the same spot and let it roll out to a complete circle. Cook the pancakes on 1 side until they set. When small bubbles appear on the uncooked surface, flip the pancakes and cook until golden on both sides, about 6 minutes. Keep the pancakes on a plate set at the back of the stove under a dry towel to keep warm while you make the rest.

To serve, lay the pancakes on a plate and dust with confectioners' sugar. Serve with roasted apples, crispy prosciutto strips and warm maple syru
