As I was reading through the chapter of the book, InsideEveryWoman I too an a registered nurse. I do not currently work outside the home as our handicapped son requires a lot of my attention, I feel that is what I am here to do. To work with him and help him to be the best he can. He requires much care and my nursing background really helps me there. I do have a passion in helping him as the book describes and discusses one's passions. I feel good about myself when I see how excited he gets over what some may consider trivial, to him it is the world.

Baked French Toast
Hey all. Doesn't this recipe sound yummy. I saw give it a try for an awesome Sunday brunch.
1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup
Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F.
Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.
Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

First day
So yesterday was the first day of school. It was so quiet all day. Though I did enjoy the quietness, I still get lonesome for them. They are growing up so fast. We they got home, my son is a junior this year and all classes went well. He roles with the punches so to say, and rarely complains. A great student though. My daughter in college is just shining too. I am so proud of her as well. Hope all your kids have a great school year as well.

School tomorrow
Hey all. Well tomorrow is the fisrt day of school for my kids. They are in high school and one is in special ed. I wonder where the summer has gone. It was great though. My daughter in college is doing great as well. So far so good for her. My son is going for his driving test this week as well. I am sure he is ready, but he will feel much better when it is over. Please wish him luck and I will let you know how he makes out.

Here is a great recipe to try when the fall weather starts, which is just around the corner. I love the taste and you can change it to fit your family's likes as well.
Cheeseburger Meatloaf
1 pound ground chuck
10 slices bacon, cooked and crumbled
1 (8-ounce) package sharp Cheddar, grated
2 large eggs, lightly beaten
1/4 cup bread crumbs, toasted
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons prepared mustard
1 (3-ounce) can French fried onions
Preheat oven to 350 degrees F.
In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.
In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.
Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

Closing the pool
Hey all. I know that some people think I am crazy, but we close the pool about now for the rest of the season. in our family, once school begins, the kids do not swim anymore and the pool just sits and wastes money with chlorine and electricity and all. So I think we are closing it on monday. We are all available and someone can watch my son that is handicapped. I have to goand buy some shock and other supplies and then we will be all ready. It is all clean for now, but no one seems interested in swimming.

Memory Walk
Hey all. I was on the internet this evening and I came across a site that I know affects so many of us out there, so I wanted to pass it on to you all as well.
Team Captainis the site that discusses the nationwide memory walk for Alzheimer's Disease.
What I am talking about is Alzheimer's Disease and the Memory Walks that are going on nationwide. There is one scheduled in my area that my family and I plan to partake in in October, the 13th to be exact. A great uncle of mine passed away two years ago from Alzheimers and I know the toll it takes on the family, especially those very close to the loved one. It is heartbreaking to see their memory slowly disappear and become someone you do not know anymore. It is especially difficult when they no longer recgonize you. Alzheimer'sAssociation is the site to check out to learn more about this disease. I know as I said how difficult it is on the family. Those of you interested in signing up for the memory walk in your area, please be sure to sign up early. It will be a beautiful time of year to get out and walk for a great cause and raise some money and increase awareness about the disease. Please sign up, you may even be interested in becoming a team captain as well. So much good can be accomplished if we all just get out and walk for a great cause. Chicken
Hey all. If you are like me you are always looking for another chicken recipe. Here is one for oven fried chicken which will be great in the cooler months ahead. Enjoy
2 chickens (3 pounds each), cut in 8 serving pieces
1 quart buttermilk
2 cups all-purpose flour
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Vegetable oil or vegetable shortening
Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.
Preheat the oven to 350 degrees F.
Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.
Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot

Another great recipe
Hey all. Here is another great recipe.
A great chicken tenders recipe for the kids.
tablespoons plus 1/2 cup extra-virgin olive oil
1 cup buttermilk
1 1/2 pounds chicken tenders (about 18)
3 large garlic cloves, minced
1/2 teaspoon salt
3 tablespoons balsamic vinegar
Freshly ground black pepper
1 1/4 cups freshly grated Parmesan
3/4 cup Italian-style seasoned bread crumbs
Preheat the oven to 500 degrees F.
Brush 1 tablespoon of oil over each of 2 heavy large lined baking sheets. Place the buttermilk in a large bowl. Add the chicken tenders and stir to coat. Let stand at least 15 minutes and up to 30 minutes.
Meanwhile, mash the garlic with the salt in a medium bowl. Whisk in the vinegar and then the remaining 1/2 cup of oil. Season the vinaigrette, to taste, with pepper. Transfer the vinaigrette to a small serving bowl.
Stir the Parmesan and bread crumbs in a pie dish. Remove the chicken tenders from the buttermilk and dredge them in the bread crumb mixture to coat completely, pressing to adhere. Arrange the coated chicken tenders on the prepared baking sheets, spacing evenly. Drizzle the remaining 2 tablespoons of oil over the chicken tenders and bake until they are cooked through and golden brown, about 12 minutes.
Transfer the chicken tenders to a platter and serve the vinaigrette alongside for dippin

BRITISH GAS LAUNCHES GREENEST ENERGY TARIFF
9 August 2007: British Gas has announced it is launching two new green energy tariffs, Zero Carbon, which will be the greenest tariff available on the domestic market and Future Energy. British Gas has launched the tariffs, in response to the increasing demand for green energy products.
Householders signing up to the Zero Carbon tariff will:
• reduce their household energy carbon emissions to zero through Kyoto compliant offset schemes which will meet the new Defra requirements
• help fund a direct increase in investment in renewable energy generated in the UK
• contribute to the new British Gas green fund which will:
o invest in developing new renewable technologies such as wave power
o oversee a programme to help schools in the UK reduce their CO2 emissions
Gearóid Lane, Managing Director British Gas New Energy said,”Our new tariff responds to consumer demand for truly green energy solutions. It is essential that customers have confidence in green energy tariffs and that their credibility is not damaged by tariffs that claim to be green but in reality do not deliver any incremental environmental benefits. Green tariffs are moving from niche to mainstream products and we’re leading the industry by offering a tariff that will do more for the environment than any other product currently available.”
Under the government’s Renewables Obligation (RO), electricitysuppliers in the UK are already required to produce an increasing percentage of their electricity through methods such as wind farms which, unlike traditional power plants, produce zero carbon emissions. For 2007/2008 this figure is set at 7.9%.
In a recent report, the National Consumer Council (NCC) raised concerns that some energy suppliers are packaging electricity which is produced under the RO scheme as “green”, yet it delivers no additional environmental benefits. The NCC called on energy suppliers to take steps beyond their legal requirements and offer green energy tariffs that provide genuine additional environmental benefits, in particular CO2 emissions reduction.
British Gas worked with Global Action Plan and The Climate Group’s “We’re in this Together” campaign to develop Zero Carbon which goes further than any other green tariff in meeting these requirements offering consumers the only zero carbon option on the market.
The tariff carries a premium of £84 per year, reflecting the higher cost of producing energy through lower carbon emission schemes.
Virginia Graham, Chair of Global Action Plan, said, “The British Gas Zero Carbon tariff delivers on all three of the essential requirements of a green tariff which are: additionality, transparency and verifiability. As such it is a very welcome new offering in the market. Consumers signing up to the tariff can be confident that they are getting 12 per cent more renewable energy than they would otherwise have got. The carbon emissions from their electricity and gas will also be offset with emissions reductions from projects accredited by the United Nations.”
Zero Carbon is one of the first initiatives launched through the ‘We’re in this Together’ campaign, which was launched in April 07 as an alliance of some of the UK’s biggest brands who are all working to help their customers reduce their impact on the climate.
Dr Steve Howard, CEO of The Climate Group and founder of ‘We’re in this Together’ said, “We’re committed to offering people ways to make a real impact on climate change through Together.com. We’ve worked with British Gas to ensure that Zero Carbon is a genuine step forward in delivering more environmental benefits than any other tariff currently available.”
British Gas’s second green energy tariff, Future Energy, offers an alternative green electricity tariff at a premium of just £20 per year. Customers signing up to this tariff will contribute to a green fund which will provide solar panels and other renewable energy technologies to UK schools. School
Hey all. I think we finished the school shopping yesterday. What a relief. My daughter needed the most as she is leaving for college this year. Believe it or not, she leaves in just two days. I simply can not believe it. I am so excited for her. She worked so hard in high school and all her hard work paid off. We will be taking her down on friday morning so we have a couple of very busy days ahead.

Dinner recipe for today
Hey all. We are planning on going out for dinner this evening as it is warm out, but here is a great recipe to check out and try. Let me know what you think.
Chicken and Rice casserole
2 tablespoons butter or vegetable oil
1 medium onion, peeled and diced
3 cups diced, cooked chicken
2 (14 1/2-ounce) cans green beans, drained and rinsed
1 (8-ounce) can water chestnuts, drained and chopped
1 (4-ounce) jar pimentos
1 (10 3/4-ounce) can condensed cream of celery soup
1 cup mayonnaise
1 (6-ounce) box long-grain wild rice, cooked according to package directions
1 cup grated sharp Cheddar
Pinch salt
Preheat oven to 350 degrees F.
Heat butter or oil in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl.
Add all remaining ingredients to bowl and mix together until thoroughly combined.
Pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly. Let stand for a few minutes before serving.

Haircut
Hey all. I have to take my son for a haircut soon. He is the one with special needs, so it can be a challenge at times. I take him to my cousin who is great with him. He gets nervous at times and she puts him at ease, so the process moves along more smoothly. He always looks so cute after his hair cut as well. Oh well. It is getting late. I best go. Later all.

French Toast
Hey all. Here is a great idea for a nice bruch get together. I hope you enjoy it as much as my family does. It is another Paula Deen recipe, so lots of the good stuff.
1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup
Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F.
Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.
Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole

More fried ice cream
Hey all. I gave you a recipe in a few posts ago for fried ice cream that is not FRIED. Well here is another version that is a bit more difficult but it is worth the extra effort. Try and let me know what you think.
1 quart vanilla ice cream
1 cup crushed frosted cornflakes
1 cup sweetened coconut flakes, or 1 cup chopped walnuts, or 1 cup cookie crumbs
2 large eggs
2 tablespoons sugar
Vegetable oil, for frying
Hot chocolate sauce, optional
Whipped cream, optional
With an ice cream scoop, form 4 large balls of ice cream. Place on a waxed paper lined sheet and cover with plastic wrap. Freeze for at least 2 hours.
In a bowl, combine the cornflake crumbs with either the coconut, walnuts or cookie crumbs (or any combination). Spread the mixture in a shallow dish.
Dip the ice cream balls in the crumb mixture and freeze for 30 minutes.
In a bowl, beat the eggs and sugar. Dip the coated ice cream balls into the eggs, then roll in the crumb mixture, coating completely. Freeze for 1 hour. (If necessary, or for a thicker crust, roll again in eggs and crumbs until the balls are completely coated.)
Heat the oil in a large pot or fryer to 400 degrees F. One at a time, lower the balls into the oil and fry until golden brown, about 30 seconds to 1 minute. Remove from the oil and place in a dessert bowl. Drizzle with chocolate sauce and whipped cream, as desired. Repeat with the remaining ice cream.

Fried Ice Cream

1 pint coffee or vanilla ice cream, softened in microwave on defrost 30 seconds
2 cups flaky corn cereal (recommended: Corn Flakes)
2 teaspoons ground cinnamon
Honey, for drizzling
Scoop out ice cream into small bowls. Crush corn cereal in your hands (or in a re-sealable plastic bag) and top the ice cream. Sprinkle with cinnamon and drizzle with honey

Hey all. I recently got home from taking my mother grocery shopping. I think that it is the highlight of her week. I usually take other places as well, like the bank, the drug store, whereever she wants. Since she is up there in age she no longer drives. I seem to be the assigned child to do the weekly grocery trip. it is nice to know though that she enjoys it so much.

Pizza
Hey all. We had pizza for dinner this evening, so no cooking for me. It was way too hot anyway. So here is a great recipe thatI found and I look forward to trying out when the weather gets cooler. Let me know what you think.
APPLE COBBLER
2 1/2 pounds Granny Smith apples
2 pounds Fuji apples
1 1/2 pounds Gala apples
3 cups granulated sugar
2 cups all-purpose flour
1/8 teaspoon salt
1 1/2 sticks (6-ounces) chilled unsalted butter, plus softened butter for baking dish
1/4 teaspoon ground cinnamon
1/2 teaspoon freshly ground nutmeg
1 teaspoon grated lemon zest
1 (6-ounce) package sweetened, dried cranberries
1 large egg
1 egg yolk
1 teaspoon vanilla
1 (6-ounce) package sliced almonds
Note: You will need approximately 8 to 10 apples total.
Preheat the oven to 400 degrees F and butter a 9 by 13-inch baking dish.
Peel and core the apples and cut them into 1/4 to 1/2-inch dice. Try to get the apples pieces as uniform as possible to ensure even baking in the cobbler. Combine the apples with 1 cup of the sugar in a large bowl. Cover and set in the refrigerator while preparing the cobbler topping. The sugar will draw out some of the moisture in the apples, so the filling will be nice and thick.
Combine the remaining sugar with the flour and salt in a medium size bowl. Set aside 1/2 cup of the sugar and flour mixture to coat the apples. Cut the chilled butter into small pieces and work into the sugar/flour mixture using a pastry cutter, a fork, or your fingers until it forms a coarse meal.
Drain the sugar syrup from the apples and set aside. Combine the apples with the reserved flour and sugar mixture. Add the cinnamon, nutmeg, lemon zest, and sweetened dried cranberries to the apples and stir well to evenly distribute all the flavors. Pour into the buttered baking dish.
Lightly beat the egg, egg yolk, and vanilla and slowly drizzle it into the flour mixture. Don't worry if it seems a little dry at first. Continue to stir the mixture until the flour is completely absorbed into the egg. (You might want to get your hands into it and use your fingers to finish.) Take a small bit of the topping and roll it into a 1-inch ball. Gently flatten the ball into a disk and place it on top of the apple mixture in the baking dish. Repeat with the remaining topping, slightly overlapping the disks.
Bake for 35 to 45 minutes or until the juices are bubbling and the topping is a light golden brown. Let the cobbler rest for 10 to 15 minutes before serving. While the cobbler is sitting, coat the almonds with the reserved sugar syrup. Drain off the excess syrup and place the almonds on a buttered parchment lined baking sheet. Roast until the almonds are golden brown, approximately 5 to 10 minutes. Scatter them over the cobble

Storms
WOW. Last night about 1 AM we had some wicked storms come through our area. They knocked the power out and lots of wind was associated with it. Lucky for us, we felt no real damage. I heard on the news this morning that areas just north of us had some wind damage though. Oh, our power was back on in about 3 hours, but a grocery store not more than one half mile from our house was still with out power at 9 AM. I think they were concerned about all their frozen foods as well. Hope that all is well witht hem as I love to shop there.

Dinner
Hey all. The whole family is getting together for dinner this evening. It is my daughter's second anniversary and she and her husband are in for the day so we decided to have a get together. We are having a good old fashioned cook out as it is so hot here. My son is making the hot dogs and burgers and i am supplying all the salads and fruits. I try to keep it as healthy as possible. I must say that I can not believe it was two years ago that thye were married. How time flies.

Halloween The Movie
Hey Guys. I was online today checking out movie trailers and I decided to show you one of my most “can’t wait to see this movie” trailer. The original Halloween the movie was definitely one of my favorite scary movies, if not my favorite scary movie of all time. I know that my daughter’s favorite scary movies are all of the Halloween movies. She loves to stay up all night ON Halloween and watch ALLL of the Halloween movies. She loves them so much and cannot wait until this new one comes out. She goes to see movies all the time and she said the preview for this one and fell in love with it. She already asked me tons of times to go to the movie with her when it comes out. Rob Zombie, the writer and director of the latest Halloween movie, I’m sure did an excellent job on this awesome new remake of a great movie. It will come out on August 31st, which cannot come soon enough. I hope that the Rob Zombie movie talks about the ways in which Michael Myers ended up like this. Maybe it will show his mental decline and entry into insanity. That would be a cool angle of Halloween the movie.

Another great recipe
Here is a great recipe from Rachel Ray called Spaghetti with zucchini
2 small to medium zucchini
1/4 cup extra-virgin olive oil, 4 turns of the pan
4 cloves garlic, chopped
Salt and freshly ground black pepper
1 pound spaghetti, cooked al dente
1/2 cup grated Parmigiano or Romano
Pile up 2 or 3 layers of paper towels on a work surface. Working on the paper towels, shred zucchinis using a box grater holding the zucchini at an angle.
Heat a large skillet over moderate heat. Add extra-virgin olive oil to the pan Add chopped garlic to the oil. When garlic speaks by sizzling in oil, add shredded zucchini. Season zucchini with salt and pepper. Saute shredded zucchini 7 to 10 minutes. Add hot, drained pasta to the pan. Toss spaghetti with zucchini and garlic oil. Add a couple of handfuls of grated cheese to the pan. Adjust seasoning and serve

Another Great Recipe
Nacho Bread Pizza It is one of Rachel Ray's recipes. I hope that you enjoy it.
1 loaf baguette or semolina bread, day old is fine
1 tablespoon extra-virgin olive oil, 1 turn of the pan
2 cloves garlic, chopped
1 jalapeno, seeded and chopped or 1 pickled hot pepper of any kind, chopped
1 (15-ounce) can black beans
2 teaspoons hot sauce
1 1/2 teaspoons chili powder
1 1/2 teaspoons ground cumin
Salt and pepper
1 cup prepared salsa, any variety
2 cups shredded Cheddar, smoked Cheddar, Monterey Jack or pepper Jack
1 heart romaine or 1/2 iceberg head, shredded
1/2 cup green olives with or without pimiento, chopped
1/4 red onion or 2 to 3 scallions, chopped
2 plum or vine tomatoes, seeded and diced
Split bread lengthwise. Hollow the bread out and cut each half in half across, making 4 boats.
Preheat oven to 350 degrees F.
Heat a small nonstick skillet over medium heat. Add oil, 1 turn of the pan, garlic and hot peppers. Drain beans. Add half of the beans then mash the remainder of the beans in the can using a fork. Add mashed beans to the pan and combine with whole beans. Season beans with hot sauce, chili powder, cumin, salt and pepper. When the spicy beans are hot through, spread them evenly across all of the bread. Top with salsa and liberally sprinkle with cheese, covering bread to all edges. The boats will only be half-full. Melt cheese in the oven until it bubbles and begins to brown.
