Nacho Potatoes

Here is another great snack food that is so easy to prepare. I hope you enjoy it as we do.


1/2 (22-ounce) bag waffle fries (recommended: Ore-Ida)
1 (16-ounce) can black bean refried beans (recommended: Rosarita)
1 cup Mexican style shredded cheese (recommended: Kraft)
1 (2 1/4-ounce) can sliced black olives (recommended: Early California)
1/2 cup mild chunky salsa (recommended: Pace)
1/2 cup sour cream

Preheat oven to 400 degrees F.

Place a sheet of tin foil on a baking sheet. Place individual waffle fries on the sheet and space evenly. Using oven mitts, place the baking sheet in the oven and bake fries for 18 to 20 minutes.

While the fries are baking, open the can of black beans using a can opener and spoon into a microwave-safe bowl. Cover the bowl loosely with plastic wrap and microwave on high for 4 to 6 minutes.

Using oven mitts, remove the fries from the oven and let cool about 5 minutes.

To assemble, evenly space the fries on a microwave safe plate. Top each fry with 1 tablespoon of the heated beans and then sprinkle with the cheese and olives.

Put the plate in the microwave and heat on high for 1 minute, or until cheese is melted. With oven mitts, remove the plate from the microwave. Top each fry with 1 teaspoon salsa and 1 teaspoon sour cream.

Wings

Here is a great snack recipe that my kids love. Check it out and tell me how you like it.


3 pounds chicken wing drumettes
1 tablespoon salt
1 teaspoon ground black pepper
1 bottle (10 ounces) teriyaki marinade sauce (recommended: Kikkoman)
1 can (8 ounces) crushed pineapple (recommended: Dole)
2 tablespoons sesame seeds, for garnish
Peanut Dipping Sauce, recipe follows
Vegi-Ranch Dipping Sauce, recipe follows

Preheat oven to 400 degrees F.

Wash and pat dry the chicken drumettes. Season with salt and pepper. Place the chicken in large zip-top bag. Pour the teriyaki marinade and crushed pineapple into the bag. Zip the bag and mix the chicken around with your hands by squeezing the bag. Place the bag in the refrigerator and let sit for 1 hour.

When ready to cook the drumettes, line a baking sheet with tin foil. Remove the drumettes from the marinade bag and place them on the baking sheet, leaving some space between each piece. Throw away the marinade bag and wash hands with warm water and soap.

Using oven mitts place the baking sheet in the oven and bake for 40 minutes. Remove the drumettes from the oven with baking mitts and, using tongs, place the drumettes on a serving plate. Sprinkle with sesame seeds and serve with Peanut and Vegi-Ranch Dipping Sauces.

Peanut Dipping Sauce:
1 cup organic smooth peanut butter (recommended: Laura Scudder's)
1/4 cup limeade frozen from concentrate, defrosted
1 cup plain yogurt (recommended: Dannon)
1 teaspoon chili-garlic sauce
1/2 teaspoon salt

In a small bowl combine the peanut butter, limeade, and yogurt. Mix it all together with a spoon or whisk. Stir in the chili-garlic sauce and season with salt. Refrigerate until ready to serve.

Vegi-Ranch Dipping Sauce:
1 container (8 ounces) chive cream cheese (recommended: Philadelphia)
1 cup sour cream

In a small bowl combine the cream cheese and sour cream. Mix it together with a spoon.
Refrigerate until ready to serve

Fried Chicken

Hey all. My son made the following recipe for fried chicken. It was delicious.

Fried Chicken Recipe courtesy Alton Brown

Episode: Fry Hard 2: The Chicken (Fried)





1 broiler/fryer chicken, cut into 8 pieces
2 cups low fat buttermilk
2 tablespoons kosher salt
2 tablespoons Hungarian paprika
2 teaspoons garlic powder
1 teaspoon cayenne pepper
Flour, for dredging
Vegetable shortening, for frying

Place chicken pieces into a plastic container and cover with buttermilk. Cover and refrigerate for 12 to 24 hours.

Melt enough shortening (over low heat) to come just 1/8-inch up the side of a 12-inch cast iron skillet or heavy fry pan. Once shortening liquefies raise heat to 325 degrees F. Do not allow oil to go over 325 degrees F.

Drain chicken in a colander. Combine salt, paprika, garlic powder, and cayenne pepper. Liberally season chicken with this mixture. Dredge chicken in flour and shake off excess.

Place chicken skin side down into the pan. Put thighs in the center, and breast and legs around the edge of the pan. The oil should come half way up the pan. Cook chicken until golden brown on each side, approximately 10 to 12 minutes per side. More importantly, the internal temperature should be right around 180 degrees. (Be careful to monitor shortening temperature every few minutes.)

Drain chicken on a rack over a sheet pan. Don't drain by setting chicken directly on paper towels or brown paper bags. If you need to hold the chicken before serving, cover loosely with foil but avoid holding in a warm oven, especially if it?s a gas oven.

Today's Recipe

Check out this recipe. Hope thatyou enjoy it as much as we did. It is Fried Chicken

up hot red pepper sauce
2 cups self-rising flour
2 1/2 pound chicken, cut into pieces
House Seasoning, recipe follows
Oil, for frying, preferably peanut oil

Heat the oil to 350 degrees F in a deep pot. Do not fill the pot more than 1/2 full with oil.

In a medium size bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 1 cup). Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour. Place the chicken in the preheated oil and fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. Approximate cooking time is 13 to 14 minutes for dark meat and 8 to 10 minutes for white meat.

Friday

Hey all. I think the kids and I are going swimming later. It is really humid here. The pool needs to be cleaned out, so I suppose I should go and do it. It is like having another room in the house as far as vacuuming it regularly and all. Boy, I will tell you though, on these hot days, it is great. More later as I have work to get done.

Hey all. I recently received a product in the mail that I found to be so useful, so I wanted to pass my new find on to you all as well to try out also.
Freeze It is a product that I found to be so useful on those sore an achy mornings we all experience as we get older. You just apply a small amount of this greaseless and stainless ointment to the sore area and in no time, the pain was greatly relieved. One other great feature, no only did it provide fast pain relief, but I found thatthat relief was felt for a longer period of time than most other products. Freeze It comes in two great sizes as well, a 3 oz. roll on which allows for hands free applications and very easy to apply to affected and sore areas. Also a 4 oz. tube that you can see the amount you are using and can actually massage the item into your sore joints. New Recipe!!!

Hey Guys! I found this awesome new recipe that I just KNOW you guys are going to LOVE!


Here's a cake for anytime and you can alter the filling as you please. The cake goes together incredibly fast, and adapts well. We thank Marion Smith-Battle for this festive recipe.

Ingredients

5 eggs
1 cup sugar
4 Tablespoons cocoa powder
1 cup whipping cream (1/2 pint container), chilled
1/4 teaspoon almond extract
1/2 cup maraschino cherries, chopped fine
1 Tablespoon liquid from the cherry jar
1 additional Tablespoon sugar
Directions
Preheat oven to 350 degrees Fahrenheit.
Grease and dust (or use parchment paper) a 12" x 20" x 1/2" cookie sheet/jellyroll pan.
In a large bowl, whip the egg whites until peaks are firm but not stiff. Set aside only briefly.
In a separate bowl, froth the egg yolks, then add the cocoa powder and the sugar. Mix very well, to get volume, but do not overmix.
Carefully add the chocolate mixture to the egg whites, mixing and folding gently to incorporate, but do not deflate the egg whites too much.
Bake at 350 degrees Fahrenheit for 20 minutes.
Remove and cool. It's basically a flat soufflé, so it will fall. This is normal.
Turn the cake over onto a clean dishtowel (or additional clean parchment paper) and carefully remove the pan (and baked parchment paper).
Cover with a moist towel until cooled. Or replace the pan over the top of the cake to keep it moist while you prepare the filling.
Whip the cream with the almond extract and the cherry liquid. Add the sugar. Stir in the chopped cherries.
Spread the whipped cream mixture over the cooled cake, just to edges, and roll gently. Place on serving platter. Dust with powdered sugar if desired.
Refrigerate for easier slicing. Slice into fairly thin (less than 1-inch wide) slices, and serve.


(Note: This cake is delicate, as it has no flour, so it is probably best to fill it with any variety of soft fillings,
but not ice cream.)

Chores

Hey all. Great day outside. I have the kids getting some chores done. Just yard work and things ike that that seem to get out of control before you know it. It is a great day as low humidity makes work easier. If they feel like it, a swim in the pool will be what we do after the chores. Well I best go help them. Don't know what to make for dinner yet. Pancakes

Hey all. I found this pancake recipe and thought it sounded great. Check it out and try it.

For the topping:
12 slices prosciutto
Salt and freshly ground black pepper, optional
4 Golden Delicious apples
1/2 stick butter, melted
1/4 cup maple syrup

For the pancakes:
2 cups ricotta
4 large eggs, separated
1 cup buttermilk
1 tablespoon lemon juice
1 teaspoon lemon zest
1 cup all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
Pinch salt
Butter, for cooking
Confectioners' sugar, for dusting, optional
1 cup maple syrup, warmed on stove-top

For the topping:
Preheat oven to 400 degrees F.

On 1 tray lay the slices of prosciutto out in a single flat layer. Season with some salt and freshly ground black pepper, if desired, and pop into the oven. Roast the prosciutto until crispy, about 10 to 15 minutes.

Cut each apple into thirds, remove the cheeks and discard the core. Slice each piece into 4 and toss with butter and maple syrup in a large bowl. Transfer to a roasting pan and place in the oven. Roast the apples until they are fork-tender and slightly caramelized on the top, about 30 to 45 minutes depending on ripeness of the fruit.

For the pancakes:
Combine the ricotta, egg yolks, buttermilk, lemon juice, and lemon zest in a large mixing bowl. Sift the dry ingredients: flour, sugar, baking powder, and salt together into the ricotta mixture and stir until fully combined. In a separate bowl whisk the egg whites until stiff peaks form and then gently fold into the batter.
Heat a large nonstick pan over medium heat and add a little butter. Cook 2 to 3 pancakes at a time using a 6-ounce ladle or measuring cup to pour the batter into the pan. The trick to perfect round pancakes to carefully pour all the batter in the same spot and let it roll out to a complete circle. Cook the pancakes on 1 side until they set. When small bubbles appear on the uncooked surface, flip the pancakes and cook until golden on both sides, about 6 minutes. Keep the pancakes on a plate set at the back of the stove under a dry towel to keep warm while you make the rest.

To serve, lay the pancakes on a plate and dust with confectioners' sugar. Serve with roasted apples, crispy prosciutto strips and warm maple syrup

Home

Hey all. We came home very late last night from a nice visit to see my daughter and son in law. We helped them install a set of french doors. What a major project, but they came out great. Then we went out to a nice restaurant for dinner and then on the road home for a three hour ride. I wish she did not live so far away, but one has to go where the work is. Her place is really nice too.

Visiting

Well today we are planning on going to visit my daughter and son in law who live out of town. We are all going and looking forward to seeing her new house. My husband is taking some of his tools as well because there are a few projects that need completion and the help of a few people. Namely for onw, installing a set of french doors. Hopefully we can get that done, but we shall see. They planned a cook out for today as well. It will be nice not to have to cook today. I will let you know more. Bye for now.

Eggplant recipe

Here is a great eggplant recipe. Great for those of you that are growing them in your garden.
Eggplant Parmesan From Food Network Kitchens





2 medium eggplant (about 2 1/4 pounds), cut into 1/2-inch-thick round slices
Kosher salt, as needed, plus 1 tablespoon
5 cups fresh breadcrumbs
1 tablespoon dried oregano
1 tablespoon dried thyme
Freshly ground black pepper
Vegetable oil for frying
All-purpose flour for dredging
6 large eggs, beaten
2 tablespoons whole milk
Olive oil, as needed
7 cups QUICK MARINARA SAUCE
2/3 cup grated Parmesan, divided
1 pound fresh mozzarella, thinly sliced

Arrange the eggplant slices on several baking sheets and sprinkle generously all over with kosher salt. Set aside to let the bitter juices weep from the eggplant, about 1 hour.

Transfer the eggplant to a colander in the sink, and rinse well under cold running water. Transfer eggplant to a work surface and blot very dry with paper towels.

In a large bowl, whisk together the 1 1/2 teaspoons salt, breadcrumbs, oregano, thyme, and season with pepper.

Place the flour in a medium lipped plate or bowl. In another medium bowl, whisk the egg and milk together. Dredge an eggplant slice in the flour, then dip it in the egg, and finally dredge it in the breadcrumb mixture. Shake off any excess breading and transfer the eggplant to a baking sheet. Repeat with the remaining eggplant.

In a large straight-sided skillet, pour the oil to a depth of 1/2 inch. Heat the oil over medium heat until it registers 400 degrees F on a deep frying thermometer. (The oil must be heated to 400 degrees F. so that the breaded eggplant, when added, will drop the temperature of the oil to the proper frying temperature of 375 degrees F.)

Working in small batches, fry the eggplant slices, turning once, until golden brown, about 3 minutes per batch. Using tongs, transfer to a paper towel-lined baking sheet and season with salt to taste. Repeat with the remaining eggplant.

Preheat the oven to 400 degrees F. Lightly brush a 15 x 10- x 2-inch-baking dish with olive oil. Cover the bottom of the baking dish with 1/3 of the marinara sauce and arrange half of the eggplant over the sauce. Cover the eggplant with another 1/3 of the sauce. Scatter half of the Parmesan and half of the mozzarella over the sauced eggplant. Repeat with the remaining eggplant, sauce, Parmesan, and mozzarella. Bake until hot and just beginning to brown, about 30 minutes. Serve immediately.

Swimming

Hey all. Well the kids want to go swimming and since the threat of severe weather is over, I said great. I plan to take the computer down by the pool to monitor their swimming. They love having their friends over as well. We seem to many times have such a gang over. I think our house appears to be the "go to house". I like it that way though.

Dinner recipe

Hey all. Here is another great recipe. Try when you get time. it is delicious.
Bread Pudding

2 cups granulated sugar
5 large beaten eggs
2 cups milk
2 teaspoons pure vanilla extract
3 cups cubed Italian bread, allow to stale overnight in a bowl
1 cup packed light brown sugar
1/4 cup (1/2 stick) butter, softened
1 cup chopped pecans

For the sauce:
1 cup granulated sugar
1/2 cup (1 stick) butter, melted

Preheat the oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.

Dinner

Hey all. Dinner this evening was delicious. Here is what I made. Fry one pound of chicken tenders in about three tablespoons of italian dressing. Fry till brown to taste. Remove from pan and add, orange peppers and carrots that are cut julienne style. My son cut them for me. When tender, add chicken back and fry a few more minutes. Serve over rice. It is very tasty. Enjoy it.

Party over

Hey all. The party was a huge success. The weather was perfect and all the food went over great. I made 20 pounds of turkey sausage. Can you believe it? My sister made sloppy joes. We also had a meat and cheese paltter, baked ziti and lots of salads. The food was wiped out. The cake was beautiful too. Her picture was on it and no one wanted to cut it. What a great day.

Today's Recipe

Hey all. Hey is a recipe that I wanted to pass on to you all. I hope you enjoy it as much as I did. Let me know. It is another Paula Deen recipe, loaded with butter. YUM


2 cups granulated sugar
5 large beaten eggs
2 cups milk
2 teaspoons pure vanilla extract
3 cups cubed Italian bread, allow to stale overnight in a bowl
1 cup packed light brown sugar
1/4 cup (1/2 stick) butter, softened
1 cup chopped pecans

For the sauce:
1 cup granulated sugar
1/2 cup (1 stick) butter, melted
1 egg, beaten
2 teaspoons pure vanilla extract
1/4 cup brandy

Preheat the oven to 350 degrees F. Grease a 13 by 9 by 2-inch pan.

Party

So we are still in the party planning mode. I was going to make pasta sauce today, but I opted to wait til tomorrow. The weather is still suppose to be great Saturday, I hope that does not change. So the graduation party is the day after tomorrow. I started putting together a list of things to do. I am really organized like that. I may drive people crazy, but oh well. I need to do it that way. The cooking begins today. I told my daughter that we are making a batch of sauce today for the sausage and peppers. Tables and chairs are to be delivered tomorrow. Party soon

Hey all. Well our graduation party is in a few days. I have the tables and chairs ordered. My fridge is over flowing with food. Night swim

Hey all. Only one thing better than this warmth is swimming in it. My kids love going for any evening swim. We generally start a fire and cook hot dogs and marshmallows. We go through a lot of them this time of year. My husband is down by the pool with them now. I told them I would be down shortly. Just have to clean up the house a bit first. New recipe

Hey all. Here is a recipe that I am going to try as I think it sounds great. If you try it also, let me know what you think of it. It is a Paula Deen recipe, lots of butter and is called Hash Brown Quiche.

3 cups, shredded frozen hash browns, thawed and drained
4 tablespoons (1/2 stick) butter, melted
3 large eggs, beaten
1 cup half-and-half
3/4 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded Cheddar
Salt and freshly ground black pepper

Preheat oven to 450 degrees F.

Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.

Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.

Lower the oven temperature to 350 degrees F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.

Heat wave

Hey all. What a heat wave is going on. WOW. It is in the upper 90's here. Great weather for a swim. I am so glad that we have a pool. Tonight is surely a night for a cook out as well. Fireworks

Hey all. Now that everything is cleaned up, we are trying to get ready for a great fireworks show. It is at a stadium here every year. The kids really look forward to it. Clean up

Hey again. Well the clean up from the whole paint mess is all done. What a mess. I thought the deck was never going to get clean. We have to go and get another gallon of paint though. I must say that the area around the pool is looking great. The furniture I painted came out nice and it all finally matches. I guess you have to know a party is up and coming to make you want to really clean up the area.

Chilly

Hey all. We had quite a chilly morning here. perfect weather to have some home cooking. I am preparing some pasta and meatballs for dinner. Great with some Italian bread as well. My son was away for two weeks with school and arrived home yesterday evening and since this is his favorite meal, I told him I would make it for him. He just loves my home cooking. One final note, always make a salad with your pasta meals. Healthy greens are so good for you.

Visiting

Hey all. We arrived home yesterday as I was out visiting my daughter and son in law. They recently purchased a new home. It looks great and we are so proud of them. Tough there are many boxes around still, the process of unpacking and making the home yours with the special touches is progressing well. New carpeting arrived last week and new counter tops two days ago. In know time they will be unpacked and really enjoying the house. W tried to help when we were there, so a bit more got done as well.
