Tummy Tuck
Hey all. I was on the internet this morning a I came across a site that I know will interest many of you out there so I wanted to pass it on to you all.

Cupcakes
Hey all. It is almost Halloween. Here is a great recipe to send in with the kids. They are a great Halloween cupcake. I am planning on sending them in with my son. Let me know how you like them and if you are making any changes. Oh, have a Happy Halloween. Take care.
Cupcakes:
1 1/2 ounces fine-quality semisweet chocolate, chopped
1/4 cups prune juice
3/4 cup all-purpose flour
3/4 cup sugar
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoons salt
1 large egg
1 large egg yolk
1/3 cup buttermilk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
Frosting:
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup peanut butter (smooth or chunky)
4-ounces cream cheese, at room temperature
4 cups confectioners' sugar
2 tablespoons milk
1 drop food coloring (green), optional
Chocolate wafer cookies
Licorice strips
Toasted coconut
Small candies
Special equipment: 12 (1/2-cup) muffin cups with paper liners
For the cupcakes: Position a rack in the middle of the oven and preheat to 300 degrees F. Set liners in muffin cups.
Put the chocolate and prune juice in a microwave safe bowl. Heat in the microwave on low power, stirring occasionally, until completely melted.
Whisk the flour, sugar, cocoa powder, baking soda, baking powder, and salt in a large bowl. In another bowl, beat the egg and yolk with an electric hand mixer at high speed until slightly thick and lemon colored, about 3 minutes. Slowly add buttermilk, oil, vanilla, and melted chocolate mixture to eggs, beating until thoroughly combined. Add the flour mixture and beat until just combined.
Divide the batter among muffin tins, filling them 1/2 of the way. Bake until a toothpick inserted into the center of the cupcakes comes out clean and the tops spring back when pressed gently, about 25 minutes. Cool the cupcakes in the tin on a rack for 10 minutes then remove from the tin and cool completely.
For the frosting: Beat the butter, peanut butter, and cream cheese in a large bowl with an electric mixer until light and fluffy. Gradually add the confectioners' sugar and milk mixing until the frosting is smooth. Add food coloring as desired. Refrigerate the frosting until firm.
To decorate the cakes: For the witches hat, score a circle in the middle of a cupcake. Cut a deep cone-like shape with a knife held at an angle. Rotate the cupcake to complete the circle and remove the center. Repeat with all the cupcakes. Generously scoop or pipe enough frosting into the center of each cupcake to fill the whole and to come over the cake to make a face. Top with a chocolate wafer cookie. Put a dot of frosting in the middle of the wafer cookie and invert the cone shaped piece of cake on top to make a witches hat. Use skinny licorice, toasted coconut or cereal flakes for hair and candies for eyes and/or nose. Refrigerate for up to 30 minutes before serving.

Thurs. Recipe
Hey all. Here is another great recipe. We had it for dinner two nights ago and it was a real hit. Give it a try and I am sure that your family will enjoy it as much as mine. It is a take on a vegetable soup. Soup is one of my favorite things to prepare and they are so healthy as well.
This is a vegetable soup with chicken too. So healthy as well.
2 tablespoons olive oil
4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 3/4 pounds)
1 small onion, chopped
1 cup sliced carrots (about 3 small)
2 1/2 cups sliced zucchini (about 2 medium)
2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
2 (14.5-ounce) cans chicken broth
Grated Parmesan, optional
In a large Dutch oven, heat olive oil over medium-high heat. Add chicken, and cook for 10 minutes, stirring frequently. Add onion and carrot, and cook for 5 minutes. Stir in zucchini, diced tomatoes, and chicken broth. Bring to a boil; reduce heat, and simmer, uncovered, for 30 minutes. Top each serving with grated Parmesan, if desired.

Family weekend

Halloween
Hey all. How is your Halloween planning going? Are your costumes ready. I helped my daughter's with hers as she is going to a party this Saturday. She is going as a referree. Today's Recipe
Hey all. I was on the internet and came across a great recipe. i hope that you will try it out. And please let me know what ou think along with any changes that you may have made. I love the comfort foods this time of year. Especially when there is a chill in the air. Well, here is the recipe.
It is a slow cooker recipe. What could be better.
Onion Soup
5 small onions, thinly sliced
2 cans (14 ounces) low sodium beef broth (recommended: Swanson's)
2 cans (10 ounces) beef consomme (recommended: Campbell's)
1 packet onion soup mix (recommended: Lipton's)
8 slices French bread, about 1 inch thick
1 cup shredded Gruyere
Combine onions, broth, consomme, and soup mix in a slow cooker. Cook on HIGH setting for 4 hours, or LOW setting for 8 hours.
Ladle soup into serving bowls. Top with a slice of French bread. Sprinkle 2 tablespoons cheese over each bread slice. Put soup bowls under broiler until cheese is melted. Alternatively, place the bread on a baking sheet and top with cheese; broil until cheese has melted, about 30 to 40 seconds, and set on top just before serving.

It is Stove top Macaroni and Cheese from Alton Brown
1/2 pound elbow macaroni
4 tablespoons butter
2 eggs
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded
In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

Hey all. A busy day ahead tomorrow. I have to take my son for blood work in the morning. Next my mom needs to go shopping, to the bank, to the drug store and who knows where else. She keeps me hopping. Then it is piano lessons after dinner and a meeting for my son's orchestra after that. I think the day will just fly by. Oh well. It is also suppose to be a rainy day. Food
Hey all. I was on the internet checking out recipes. I love looking for new recipes and trying them out on my family. Especially during the Thanksgiving season, I prepare a trial dinner with some new recipes to see which we enjoy. Here is one I am planning to try out. Let me know what you think. Please give it a try. The recipe is for Cornbread Stuffing
2 hot Italian sausages
2 tablespoons extra-virgin olive oil
1 cup chopped carrot
1 cup chopped celery
1 cup chopped onion
Kosher salt
Freshly ground black pepper
1/2 bunch fresh sage, leaves chopped
4 large corn muffins
3 large eggs
1/2 cup, chicken stock, plus more if needed
Nonstick cooking spray
Heat the oven to 350 degrees F.
Remove the casings from the sausages. Heat 1 tablespoon of the olive oil in a skillet over medium-high heat and add the sausage meat. Cook, breaking up the meat into small pieces, until browned and cooked through, about 5 minutes. Drain on a paper towel lined plate and set aside to cool while you cook the vegetables. Wipe out any excess fat from the pan with paper towels.
Heat 1 tablespoon of oil in the same skillet over medium-high heat. Add the carrots, celery, and onion. Season with salt and pepper and add the sage. Cook until the vegetables are soft, about 10 minutes. Set aside to cool a bit.
Crumble the corn muffins into a large bowl. Put in the cooled sausage and vegetables. Add the eggs and 1/4 cup chicken stock. Using your hands, mix well adding more stock if the stuffing is too dry. Spray a 2-quart oven-proof baking dish with cooking spray. Put the stuffing into the dish and bake for 45 minutes to 1 hour, or until the top is browned and crispy.

Hey all. I am on my way out the door to mail a package to my daughter in college. I try to send her something about once a week. Just treats and all. What college student does not love that? Another great recipe
Hey all. With the colder weather coming and all the great apples available, I thought it was appropriate to put together an apple recipe. Here is one of my favorites. If you love apples, give it a try.It is for baked apples. A simple dessert and oh so good. I do not use any rum and instead of currents, I use raisins. It is easy to prepare as well. Give it a try and let me know what you think.
I found this recipe on the food network site. They have some awesome recipes there.
6 large red baking apples like Rome Beauty, Cortland, or Gala
Juice and finely grated zest of 1 lemon
3 tablespoons unsalted butter, softened
3 packed tablespoons dark brown sugar
1/4 cup dried currants
1/4 cup broken walnut pieces, toasted
Six 3-inch whole cinnamon sticks
1/2 cup apple cider
1/2 cup dark rum, cider, or water
Serving suggestions: Whipped cream, or vanilla or cinnamon ice cream
Preheat the oven to 400 degrees F.
Slice off about 1/4-inch of the top of each apple. (The apple tops are perfect for snacking.) Scoop out the seeds and core of the apple with a melon-baller to make a pocket. Peel off about a 1/2-inch band of the apple's skin along the upper half of the apple with a vegetable peeler. Brush the peeled part and the interior of the apple with lemon juice.
In a small mixing bowl, combine the butter, lemon zest, and sugar. Add the currants and nuts. Place some of the butter mixture and a cinnamon stick in each of the apples. Place the apples in an ovenproof baking dish just large enough to hold the apples upright. Pour in the cider and rum, bake until the apple is tender, about 30 minutes. Baste the apples with the cider/rum mixture with a bulb baster, 2 or 3 times, during baking

Fall break
Hey all. Well my daughter will be home this weekend for fall break. She had her last test today, so she can not wait to get home. She has requested my home made spaghetti and meatballs for dinner. Italian bread is a must have as well. Well all need that extra bread ofr dunking as well. I can not wait to see her. Time to go and make the pasta sauce.

Recipe
Hey all. I have not included any recipes lately, so here is one for the cooler weather ahead. The great thing about the cold arriving is how great the house can smell with items in the stove. You do not have to worry about it over heating your house. It just warms it up.
This one is a great side dish. If you like broccoli you will love this.
Cheesey Broccoli Bake
2 pounds fresh broccoli, trimmed and cut up Frozen is okay too.
2 tablespoons unsalted butter, plus more for greasing the casserole
1/4 cup chopped celery
1/4 pound fresh mushrooms, sliced if you like these if not omit as I do.
1/4 cup chopped onion
1 (8-ounce) can sliced water chestnuts
1 (10 3/4-ounce) can condensed cream of mushroom soup
1/2 pound cheese product, softened
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup grated Cheddar
Preheat the oven to 350 degrees F. Butter a 9 by 13-inch casserole.
Steam the broccoli until tender, about 10 minutes. In the meantime, melt the butter in a medium skillet over medium heat and saute the celery, mushrooms, and onion until softened, about 10 minutes; drain. Combine the broccoli and the cooked vegetables in a bowl.
Heat the soup and softened cheese product in a saucepan over low heat until the cheese melts. Pour it over the broccoli mixture. Add the garlic salt and pepper and combine.
Put it into the buttered casserole dish and bake for 20 to 25 minutes. Sprinkle the top with the grated Cheddar the last 5 minutes of baking.

He remembers how busy my daughter was when she was in his situation. I keep telling him to hang in there as it will get better. What a good kid, just soooo busy. Good day all. Well the long holiday weekend is upon us. Do any of you have any plans. We are basically doing yard work around here. The grass is too long and some of the flowers need a trimming. My son is outside giving the dog a bath as well. She really hates it, but is in great need of a bath. The shedding is really bad this year. Swiss Steak
Hey all. I remember eating this as I kid and I loved it. Well here is the recipe for all of you as well. This was one of my favorites and my mom cooked it so well. I hope that you try it and let me know what you think. Make any changes that you feel you want to. have fun with it.
1 round steak (approximately 1 1/2 pounds), see note
1 teaspoon garlic powder
Salt and pepper
All-purpose flour, for dusting
1/3 cup vegetable oil
2 cloves garlic, crushed
1 (14-1/2 ounce) can diced tomatoes
1 medium onion, cut into strips
1 medium bell pepper, cut into strips
Cut steak into serving-size pieces. Season, to taste, with garlic powder and salt and pepper. Dust meat with flour. In heavy skillet, brown both sides of meat in vegetable oil. Transfer to Dutch oven. Combine garlic, tomatoes, onion, bell pepper, and 1 tomato-can measure of water. Pour over steak and simmer over low heat until meat is tender, about 1 1/2 hours adding water, if necessary to keep meat partially covered. Season, to taste, with additional salt and pepper. Hint: Cook this in a slow-cooker, according to manufacturers instructions, on low for a most fabulous dinner. Low heat on a slow cooker is about 200 degrees F and high heat on a slow cooker is about 300 degrees F.

Happy Birthday
Happy Birthday to my son. He is 21 today. He is my son with special needs. He was so excited when he got home from school. We had presents waiting for him and I decorated the house. Stew
I made stew for dinner this evening. It was great. What I always do is make a roast the day before. With the leftover beef, add the gravy cooked carrots and some spaghetti sauce to some cooked onions and peppers and garlic. A little salt and pepper and you are done. Serve it with some home made bread and you will love it. Try it out and see for your self.
