Hey all. What to cook for dinner. I have the perfect summer meal. Use your crock pot to cook. It will keep your kitchen cool as the oven is not being used and you can prepare those meals you love. I put a roast, carrots, potatoes, and a packet of onion soup mix with some beef broth in it. Turn it on low and cook for 9 hours. It smells great and the house stays cool. A great idea on these hot summer days. Little mess as well. Try it.

Out for dinner
Hey all. Too hot to cook, so we went out for dinner. There is a little Mexican restaurant that the locals around here love, so we went there. My son that is handicapped just loves it there. I do not know why and since he is non verbal, he is unable to tell us. All I know is that if I mention the restaurant to him, he gets very excited. Well we just got home and as usual, he loved it. I love when he is so happy.

Hey all. I was on the internet this evening and I came across a site that reminded me of my husband so I wanted to pass it on to any of you out there that are self employed as it may be useful to you.

VERY HOT
Hey all. What a hot day today. Mid 90's here. This is when it is great to have a pool. My daughter is at a mission trip for the week with the church. I feel bad for her with the heat and all, but I am proud of the work she is doing. She will be home friday though. I told her she gets to pick the dinner menu. My guess is that it will be tacos. She is so predictable. Well more later, time to go for a swim.

Cake
Hey all. Well my son has been out of town for the last few days on a school project and he is due home tomorrow. His request is an Alton Brown milk cake as he puts it. I have never made one before but I plan to give it a try. You have to make it the night before and let it sit in the frig overnight and the next day before serving it,top it with real whipped cream. It sound great but I shall let you know how it goes.

Afternoon
Hey all. What a glorious day here. Low humidity and 70's. it does not get any better. I vacuumed the pool and planted some grass a bit ago. When we put up our new fence, it left some bald areas in our lawn. My husband got some dirt and laid it down, so I planted the seed. It is fast grow so I hope that it looks good by my daughter's graduation party next month. The party is at our house. Busy, busy.

Mall
Hey all. Well the kids and I went shopping at the mall for a while. My daughter just loves to shop. There were some great deals out there tough, I must say. Also as long as we have my son's wheelchair available, he loves to be wheeled through the mall. It gave him something to do also as he gets bored and frustrated when he is not in school. He does start summer school in two and one half weeks which I know he will be looking forward to. Well I must go for now.

Hamburger
Hey all. So I was on the food network site and I think I located a yummy recipe for ground beef. Here it is and let me know what you think.
Loaf of Meat. It was sent in by a viewer
1 egg
1/2 pound ground beef
1/2 pound pork
1/2 pound veal
3/4 cup barbecue sauce
3/4 cup plain bread crumbs
1 teaspoon garlic powder
1 teaspoon seasoned salt
1 teaspoon MSG, optional
1 teaspoon white table sugar
4 tablespoons sweet paprika
4 tablespoons brown sugar
1 tablespoons garlic powder
1 tablespoons seasoned salt
Preheat oven to 400 degrees F.
Spread a large sheet of aluminum foil on your counter. Crack egg into center of foil and put all meat on top of egg. Work the egg into the meat and the meats together using your hands until well blended. Flatten out meat. Cover mixture with all remaining ingredients.
Work all the ingredients together with your hands until well blended, do not rush. Flatten out resulting mixture into what resembles a very large hamburger patty, making sure that it is fairly uniform, 1 1/2 inches thick at most. Separate coating ingredients into 2 equal parts.
First sprinkle garlic powder, salt, paprika, and sugar over the top of the meat patty/loaf. Flip the loaf over and repeat coating on the other side. Place the loaf on a baker's rack over the top of a casserole dish so the extra fat can drip away from the loaf as it cooks. Put the loaf in the center of the rack and cook for 1 hour. Check by cutting the loaf in half to make sure the center is fully cooked, 1 hour usually does it, but if not then cut out two thick pieces from the center and just put those 2 back into the oven for 10 or 15 more minutes.

Reno 911
Hey all. I was on the internet this morning and I came across a site that I must pass on to you all.If you are a Reno 911 fan as I am this is a must.
Reno 911! Miami The Movie is a site that discusses this great show. i was at the local Blockbuster just last evening getting a the DVD of the show. It is a great show that I recommend to you if you have never seen it, really worth viewing. Anyway if you get on the site, there are a series of very funny interactive games that you can play along. I showed them to my husband and he was hooked playing them as well. One particular game that we seemed to play more than the others was Calling All Units. This one is really amusing. it takes a little practice, so do not get frustrated. Get it a number of practice run throughs and I am sure once you improve you will find it as amusing as I did. When I was playing my biggest problem was running out of energy, oh well. And then there was the damage to the car. Yikes, what a mess. Well when all was said and done, my score was not that bad, I was one of the better scores in my family though.I had cost the city a whopping $118,0000 and my salary was $9300. Finally my Bustin Bonus was $3000, the best by far in my family. Yeah me. You all should really check out this site. It is so well done and while you are at it, be sure to get the Reno 9119 on DVD. I am sure that you too will become hooked as I am.

Hey all. I guess that I should get off the computer and get the chores done. I told the kids they have til 10 AM, then we get to work. It is amazing all the laundry that accumulates. Dinner ?
Hey all. I was not sure what to make for dinner tonight. I decided on just pizza, but I wanted to make a special dessert. At the request of my son I am preparing the following,
Tres Leche Cake
For the cake:
Vegetable oil
6 3/4 ounces cake flour, plus extra for pan
1 teaspoon baking powder
1/2 teaspoon kosher salt
4 ounces unsalted butter, room temperature
8 ounces sugar
5 whole eggs
1 1/2 teaspoons vanilla extract
For the glaze:
1 (12-ounce) can evaporated milk
1 (14-ounce) can sweetened condensed milk
1 cup half-and-half
For the topping:
2 cups heavy cream
8 ounces sugar
1 teaspoon vanilla extract
For the cake:
Preheat the oven to 350 degrees F. Lightly oil and flour a 13 by 9-inch metal pan and set aside.
Whisk together the cake flour, baking powder and salt in a medium mixing bowl and set aside.
Place the butter into the bowl of a stand mixer. Using the paddle attachment, beat on medium speed until fluffy, approximately 1 minute. Decrease the speed to low and with the mixer still running, gradually add the sugar over 1 minute. Stop to scrape down the sides of the bowl, if necessary. Add the eggs, 1 at a time, and mix to thoroughly combine. Add the vanilla extract and mix to combine. Add the flour mixture to the batter in 3 batches and mix just until combined. Transfer the batter to the prepared pan and spread evenly. This will appear to be a very small amount of batter. Bake on the middle rack of the oven for 20 to 25 minutes or until the cake is lightly golden and reaches an internal temperature of 200 degrees F.
Remove the cake pan to a cooling rack and allow to cool for 30 minutes. Poke the top of the cake all over with a skewer or fork. Allow the cake to cool completely and then prepare the glaze.
For the glaze:
Whisk together the evaporated milk, sweetened condensed milk and the half-and-half in a 1-quart measuring cup. Once combined, pour the glaze over the cake. Refrigerate the cake overnight.
Topping:
Place the heavy cream, sugar and vanilla into the bowl of a stand mixer. Using the whisk attachment, whisk together on low until stiff peaks are formed. Change to medium speed and whisk until thick. Spread the topping over the cake and allow to chill in the refrigerator until ready to serve.

Outside.
Hey all. I decided to bring the computer outside by the pool and then I can be on the computer while the kids are playing in the pool. The water temp is 89 degrees. How is that for nice. I am usually a baby about going in the pool, but when it is that warm, even I will go in. My daughter invited some friends over, so they are having a great time there. My handicapped son loves all the people around to. He just loves all the stimulation.

Hey
Hey all. Well it is another swelter here today. We are expecting afternoon storms to cool it down a bit. The kids and I are going for a swim soon. My husband plans on joining us after work. My son that is handicapped especially enjoys it. We put a life jacket on him and he loves the feeling of buoyancy. It is also really good for his muscles. Well they are bugging me to go now. I will write more later.

More swimming
Well we just ate dinner and the kids are begging to go swimming again. I can not blame them as it is so refreshing. As I was always told as a kid, you must wait 30 minutes after you eat. I do not know if there is any real truth to it, but it will give me a chance to clean up a bit first. Hey any of you out there believe any truth to the waiting 30 thing. Let me know. Later you all.

Burn Notice's Survivor
Hey all I was on the internet this afternoon and I came across a really fun site that I just had to pass on to you all, so here it is.
USA Network's Burn Notice is a site that discusses the new show that is premiering on June 28th.A little background on the show, Michael Weston is a CIA Operative on USA Network's new TV series, Burn Notice. In the show he will show us how he deals with situations of really true survival. Okay enough about this, now what I do if I became stranded somewhere with absolutely nothing to my name? Yikes. I think the first thing that would happen would be some screams from my mouth followed by a period of true panic. But once reality really set in, it would be time to get into deep though mode gear. What to do, what to do. If I was in a city, my best option would be to attempt to get a kind person to loan me their cell phone and to do as ET and phone home. If that failed or night set in, I would hope it was a warm night and attempt to find a safe place to get some rest. Good luck to that. Eating would be a problem. I think time to be a vegetarian and go for the berries and such. All this being said, I know I would really stink in survival mode, but hey I would give it a try.

Dinner
Hey all. Just came in from swimming with some hungry kids looking for dinner. Told them it is too hot to cook, so sandwiches tonight. I can not see the sense in heating up a kitchen. It is amazing how different we cook in the summer and winter. I do love cooking in the winter as I enjoy making the soups and stews and chili. Oh well we will just have to wait til the fall for all thiose yummy things. Or at least a cooler day.

Hot day
Hey all. What a hot day here, 90's. The kids are anxious to get in our pool. We recently purchased a heater, so they just love it. We usually set it for about 90 degrees.. I guess we are big babies. Father's Day
Hey all and a Happy Father's day to all you dads out there. My kids are taking my husband to a car show. It is a yearly thing my daughter started. They have fun and do some bonding things. The car show is close to our house and it seems to always be a hot day. I think they are planning on looking at cars too. We are looking into trading in our car and getting a new one. I want an SUV that is four wheel drive. Winters can be rough at times. I will keep you posted.

BBQ Chicken
Hey all. Anyone looking for some great BBQ chicken? I found this recipe on the food network. If you are in the mood for chicken, check it out.
The Ultimate Barbecued Chicken

The Ultimate Barbecued Chicken
Brine:
2 quarts water
2 tablespoons kosher salt
1/4 cup brown sugar
2 garlic cloves, smashed with the side of a large knife
4 sprigs fresh thyme
6 chicken legs and thighs, still connected, bone in, skin on, about 10 ounces each
The Ultimate Barbecue Sauce:
1 slice bacon
1 bunch fresh thyme
Extra-virgin olive oil
1/2 onion, chopped
2 garlic cloves, chopped
2 cups ketchup
1/4 cup brown sugar
1/4 cup molasses
2 tablespoons red or white wine vinegar
1 tablespoon dry mustard
1 teaspoon ground cumin
1 teaspoon paprika or smoked paprika if available
Freshly ground black pepper
For the brine, in a mixing bowl combine the water, salt, sugar, garlic, and thyme. Transfer the brine to a 2-gallon sized re-sealable plastic bag. Add the chicken, close the bag and refrigerate 2 hours (if you've only got 15 minutes, that's fine) to allow the salt and seasonings to penetrate the chicken.
Meanwhile, make the sauce. Wrap the bacon around the bunch of thyme and tie with kitchen twine so you have a nice bundle. Heat about 2 tablespoons of oil in a large saucepan over medium heat. Add the thyme and cook slowly 3 to 4 minutes to render the bacon fat and give the sauce a nice smoky taste. Add the onion and garlic and cook slowly without coloring for 5 minutes. Add the remaining ingredients, give the sauce a stir, and turn the heat down to low. Cook slowly for 20 minutes to meld the flavors. Once the sauce is done cooking, remove about 1 1/2 cups of the sauce and reserve for serving along side the chicken at the table. The rest of the barbecue sauce will be used for basing the legs.
Preheat oven 375 degrees F.
Preheat a grill pan or an outdoor gas or charcoal barbecue to a medium heat. Take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface. Take the chicken out of the brine, pat it dry on paper towels. Arrange the chicken pieces on the preheated grill and cook, turn once mid-way, and cook for a total of 10 minutes. Transfer the grill marked chicken to a cookie sheet and then place in the oven. Cook the chicken for 15 minutes, remove it from the oven and then brush liberally, coating every inch of the legs with the barbecue sauce and then return to the oven for 25 to 30 more minutes, basting the chicken for a second time half way through remaining cooking time. Serve with extra sauce.

Last of the cruise
One last word on the cruise. The food was good and it was nice not to have to cook for a week, but I must say, I began to miss not being in the kitchen. I find cooking a hobby of mine. More about cruise
Hey all. Again more on the cruise. We docked at Kings Wharf in Bermuda. It was nice there with a bit of history. Then traveled to Hamilton for a day of shopping. Also to Horseshoe Bay. Anyone traveling to Bermuda, check this out as it is beautiful. Finally to St. George, which was nice too but we did not have alot of time there as we had to head back to the boat. I would travel to Bermuda again, but I would fly. The waters were too rough for me.

Home
Hey all. We just arrived home today. Had a great time, but the last day the water was very choppy and we all were sea sick. This was our third cruise and the water was never this bad. Makes you not want to cruise any more. The food was not up to par either. the service was excellent though. Our waiter and stateroom attendant were awesome. Could not be better. I would suggest you try a cruise if you never have though.

Hey all. I was on the internet this afternoon and I came across a site that faces so many people these days. it seems to be growing in number from one year to the next.
IVA is a site that deals with the increasing problem of debt and how to get out of debt. The site contains a large number of interesting articles dealing with the problem many of us Americans face, debt. Fence
Hey all. So our fence down by the pool is almost done. We had to quit early yesterday because of graduation. I would say another couple of hours and it will be finished. We are building it out of a material that is very durable, composite. Have any of you heard of it? It is suppose to last forever. I hope so as it has been alot of work. Hey all. Well last evening was graduation. It was outdoors and the weather was great. There were over 460 kids in the graduating class. My daughter finished 11th in the class. I am so proud of her. Afterwards, back to the house with the family for cake and pizza. It was just a great evening. Yeah for the high school grad.

Here is a spooky story
Hey all. I was on the internet this evening and I came across a great site for all you out there that loved to be on the edge of your seat during a movie.
1408 Movie is a new summer movie due out this June 22nd. It stars John Cusack and Samuel Jackson. According to the site, here is a little background of this summer movie. The renowned and famous horror novelist Mike Enslin only believes what he can see with his own two eyes, if he did not see it,he does not believe it. In this movie,no one lasts more than an hour, this according to the site I was on. Talk about on the edge of your seat scary. 1408 Movie is a movie that reminded me of a scary story that was a nightmare my daughter had,. She loves scary stories, and she knows they scare me, so she likes to get my reaction. Here is how it went. In her sleep, she was awakened by a loud noise in the basement. Though she would usually never go down alone, this time she did. When she got to the basement, an octopus grabbed her. Though she attempted to scream, no one heard her as we were all asleep. Though she was exhausted, she finally broke its grip and got away. This night mare awakened her and needless to say at 3 AM I heard the scary story. See, never go in the basement alone at night. Those of you that enjoy a scary movie, do check this one out.

Big Day Tomorrow
Hey all. Well tomorrow is a big day in our house. My daughter is graduating high school. A milestone for many, but we are so proud of her. She is so excited about starting college this fall too. We are planning a party for her, but not til next month as she is going on a mission trip with the church shortly after graduation. I figured after she gets home, a party will be the thing to do. Police
Hey all I was on the internet this afternoon and I came across a site that I just had to pass on to you all.
police cd is a site all about the awesome rock group The Police. I saw them in concert years ago and can still remember it so vividly. It was by far the best concert that I have ever attended. For those of you that have never seen them in concert, you are really missing a great show. They are one group that I would suggest everyone see a minimum of at least once. Go see them in concert more if the opportunity comes your way. As of yet I do not have tickets for their current tour as time is possibly preventing me from seeing them again. I am working on remedying that problem though. The first time I saw them I truly enjoyed the fact that they played so many songs that I knew and we all enjoyed singing along to them all.
police cd this new CD has such a great grouping of all their great songs.I remember singing along to so many of them at the concert that I attended years ago. It brings back so many great memories.
